"Low-fat 'never fail' use up your leftovers"
1 package of eggbeaters
12 ounce can Carnation evaporated skim milk
8 ounce package shredded cheese (any variety)
salt and pepper to taste
1 cup cooked meat (chicken, ham, shrimp, etc.)
1 or 2 cups cooked vegetables (broccoli,
asparagus, bell peppers, onions or combo)
Mix eggs, milk , S/P, and cheese. Add left over meat and veggies. Pour into one to
two quart pan (sprayed with Pam) and bake in preheated 375 degree oven for approximately
30 minutes. Check it to see that center has set up. Cool 5 minutes and cut
into 4 servings.
Serve plain or with salsa on the side.
