ORIENTAL SKEWERED CHICKEN WITH PEANUT
SAUCE
SKEWERS:
4 skinless, boneless chicken breast halves, cut into 1 cubes
1 small sweet red pepper, cored, seeded and cut into 3/4 pieces
1 small sweet green pepper, cored, seeded and cut into 3/4 pieces
1 small onion, cut into 12 pieces
12 medium-size mushroom caps, cleaned
MARINADE:
1/4 rice vinegar
2 garlic cloves, chopped
2 Tbs. soy sauce
1 Tbs. dark Asian sesame oil
Mix all marinade ingredients together in a bowl. Add chicken and marinate, refrigerated, 1
hour.
Thread chicken, peppers, onions and mushroom caps on the skewers. Pour marinade over all
before cooking.
Grill or broil the kabobs, turning once, 10 minutes or until chicken is done.
Serve with Oriental Peanut Sauce. |
ORIENTAL PEANUT SAUCE:
1/4 cup creamy peanut butter
1 clove garlic, mashed
1/2 cup plain yogurt
1/2 cup chicken broth
1 tsp. soy sauce
1 tsp. sugar
1/4 tsp. crushed red pepper flakes
1/2 tsp. salt
Combine all ingredients, bring to a boil, lower heat, and simmer 5 minutes or until
thickened. Stir frequently to make it smooth.
